Why is my dragon fruit pink inside

The inside of a dragon fruit can have white, red, pinkish, or purple color. It depends on the variety and to some degree the nutrients in the soil or how early/late growers pick the fruits. The seeds of different dragon fruit species always have a black outer coating.

If you'd like to explore more, let's crack open some different dragon fruits and check out the color inside:

#1. White

White dragon fruits are the most common one you'll see. They often sell these at local grocery stores or the farmer's markets.

When the white flesh is more opaque, it can taste a bit tangy. When the flesh has turned a bit more translucent or clear jelly-like, the taste is much sweeter. Some people say the middle portion of the fruit is the sweetest.

This one has a bit brownish corner because we've left it to ripen for quite a while. At this point, the brown part gives off a slight fermented fruit/alcohol smell. The rest of the fruit is still good.

White dragon fruits are good for diabetics and the digestive system. Although it tastes sweet, its sugar content is low. If you like this variety, here are some common names for white-flesh varieties you can find at grocery stores or online for the variety cuttings:

  • Vietnam White
  • Seoul Kitchen
  • George's White
  • Bien Hoa White
  • Connie Mayer

If you happen to find this yellow one in your local area, try some. It's called the Thai Yellow Golden Dragon. It's mildly sweet and also has white flesh.

One last one you may want to try is this little guy:

Although it is small, it packs a ton of flavor. In fact, this variety is the sweetest of them all–with a BRIX score of up to 23.

It's called the Ecuador Palora and it tastes like honey. There are many spikes on the fruit, but they brush them off before delivering it to you. A small fruit can cost $2.99.

The second most common dragon fruit color you'll see is:

#2. Red

Unlike the white one, which to many people tastes quite bland, the red one will give you that wow in the mouth.

Many red varieties taste so pleasantly sweet but not too overpowering. According to Edgar Valdivia, a dragon fruit master, the deeper the red color the more anti-oxidant there is inside the fruit. And anti-oxidant is known to be great for the skin, the eyes, and a balanced blood pressure.

Some red varieties you'll like are:

  • Lisa
  • Sugar Dragon S8 (super super sweet)
  • Bien Hoa Red
  • Bloody Mary
  • Maria Rosa
  • Voodoo Child
  • Sin Espinas

All sound very cool too right! Red dragon fruits also make great cocktails, cider, jelly and even ice cream.

The amazing thing is before turning red inside, the dragon fruits actually start off as white. As it gets more ripened, it gradually changes the color to red. If you like this one, definitely give it a try. The thing about red dragon fruit though is the color may stain on your fingers when you hold a piece to have a bite. :) It's washable :) so no worries.

And the rest of other dragon fruit varieties are pink or purple:

#3. Pink/Purple

If you find your dragon fruits have a pink/purple color inside, it's totally fine! There is nothing wrong with this flesh color and it may just be the natural variety of the fruit.

The most common pink/purple flesh dragon fruits (and many people's favorites) are:

  • American Beauty
  • Physical Graffiti
  • Connie Gee
  • White Sapphire
  • Cosmic Charlie
  • Purple Haze
  • Haley's Comet
  • Delight
  • Rixford
  • Taiwan Purple
  • Malay Purple
  • LD5

And the list goes on and on. Depending on the type of pink/purple flesh you get, the fruit may be completely pink/purple or just a bit of pink/purple with some white part visible here and there.

In some other cases, it may be more pink at the outer edges of the fruit. The color intensity may depend on the time you pick the fruits. For the Delight variety, for example, it can get more pink if you let the fruit ripen a bit more.

And those are all the colors of the dragon fruits!
